Here’s a new treat recipe that your Yorkie will absolutely love! It has blueberries and coconut and will make your house smell like a tropical island.
This week has been hard for us. My father-in-law passed away last Thursday and it has been really difficult. We’ve been carting the family, Catherine included, back and forth between our house and the in-law’s. There really hasn’t been much sense of normalcy since Grandpa Richard passed, now 7 days ago. Today, sitting around the house, waiting for more family to come in, I was struck with the urge to do something, anything. One of my favorite things to do is cook, and so I decided to come up with another Yorkie treat recipe. This time, I wanted something that my daughters would like, too. There’s no reason Catherine should be the only one to have all the tasty treats around here!
I’ve been buying fun ingredients on amazon.com over the past few weeks – non-wheat flours, various oils and sweeteners, and, most recently, dried blueberries and coconut flakes. So, today I put a bunch of great stuff together and the final product is a “cookie” that will delight your furry family members, and the human ones, too!
I will say, this is the first time ever that, while making the cookies, Catherine did not leave the kitchen. She followed me around just waiting for the cookies to be done. Now, Catherine is spoiled absolutely rotten. If you can’t tell from my previous posts, we always have the freezer stocked with homemade treats and Catherine knows what she likes and what she doesn’t. She’d never had coconut before, other than a bit of coconut oil in other treats I’ve made. But, apparently the smell of coconut was so inciting, that, even before starting to bake the cookies, she was all over me.
This recipe has some great stuff in it – coconut, blueberries, brown rice flour, agave nectar, coconut oil, eggs, and almond coconut milk. And now, I present to you, Catherine’s new favorite treat! Blueberry Coconut Yorkie Treats
1/2 cup Almond Coconut Milk – Unsweetened Coconut Almond Breeze
1/4 cup raw Agave Nectar – RAW Blue Agave Nectar
1/4 cup Coconut Oil – Extra Virgin Coconut Oil
2 1/4 cup Brown Rice Flour – Brown Rice Flour
1/2 cup dried blueberries – Dried Blueberries
1 cup unsweetened coconut flakes – Flaked Coconut Unsweetened
Preheat oven to 350 degrees. Lightly grease cookie sheet with coconut oil. Mix eggs, almond milk, agave nectar, and coconut oil (warmed to liquid state) in a large bowl. Add flour and mix well. Add blueberries and coconut. The dough will be like a sugar cookie dough.
Form the dough into little flat-ish balls, appropriately sized for your Yorkie. Bake in preheated oven for 20 – 25 minutes until a beautiful golden brown. Cool on wire racks. Cool completely before serving.
Store in an airtight container in the fridge. You can freeze some and take out as needed.
